I don't know how the Cyano handles the thing, anyway just click on Widgets and there you'll find the DDG search bar.

I haven't used Android with GApps for at least a year or so, so I don't remember exactly how it behaves. But there should be a Google search bar on the home screen, see this screenshot I found:
IIRC it's not a widget, so it doesn't take any space in the grid you got for icons and widgets. Furthermore, it's visible on all home screen pages.
I believe the setting I have is simply for changing that search bar's search engine provider. I don't think CyanogenMod have done that many changes to Android, so I would guess that the setting is available in regular Android as well, but please correct me if I'm wrong.
The regular Android can't change it to another search provider (or at least I don't find the option). Anyway you can remove that Google bar disabling the corresponding app, called "Search", going in Settings-->Apps:
Then you can add the DDG widget.
Nice to see somebody else that completely removed GApps. :)

If you use NovaLauncher you can remove the Google search and replace with DDG :)

NovaLauncher seems to be proprietary, but I'm not very keen on installing a custom launcher anyway.
That's strange because I'm using an emulator of Android 6 with no GApps and I have the "Search" app. I don't know what handles that in Cyanogenmod, maybe you should ask the cyano guys.
